I recently completed the "Fundamentals of French Cuisine" cookery course at your school and I wanted to express my appreciation for the experience. The hands-on approach to learning, working in a professional kitchen and the experienced instructors were all excellent.
Since completing the course, I have been regularly cooking at home and experimenting with different recipes and techniques. I have been experimenting with different recipes and techniques, and have even had the opportunity to impress my friends and family with my cooking.
In addition to the course I just finished, I would suggest that your school offer a "Advanced French Pastry" course. This course would focus on the techniques and ingredients of a specific type of cuisine. For example, it would cover everything from classic French Pastry dishes to modern takes on traditional recipes.

This sentences addresses one of the bullet points. It is important to address all the bullet points to get at least a Band 7 in TA.

This will add to both your TA and CC. This is a nice way to smoothly end your letter. This sentence rounds off the letter and tell the reader that it is time to close.
